  • 400 gram All purpose flour
  • 2 large size egg
  • 1 tbsp Olive oil (as required)
  • Salt as per taste
  • 1tbsp semolina (optional)

Tortellini Pasta recipes Making process

Step1: To make fresh dough of tortilla pasta mix refined flour, semolina, salt and olive oil on table or in a bowl.

Step2: break two large size eggs in the middle of flour and mix well.

Step 3: use fork or whisk to beat the egg together to be incorporated with flour. Starts with inner ring of the flour and mix it together and make dough well. Continue kneading dough for 10 to 15 minutes

Step4: Keep dusting the flour as required to make dough elastic

Step5: Then wrap it in a plastic and leave for the rest for an hour. Do not keep it in the fridge.

Step6: Set up your pasta machine dial in setting and put dough in it. Make flat pasta sheet and keep repeating the process. Turing tine dial the next thinner setting makes thin. Now cut 2 inch size for different kind of tortellini.  Cut it out in small round shape by placing the cooking cutter.

Don’t worry if you don’t have pasta machine.

Dust the refined flour on the surface. Divide tortellini dough into equal portion and shape them into ball to roll out into thin dices. Simply roll the dough to make it very thin with the help of rolling pan and cut it in same size of small roundels by placing the cooking cutter. Now our next step is to fill.

Ingredients for Tortellini Pasta Filling

  • 200gram boneless chicken
  • 1½ tbsp butter
  • 120 gram parmigiano reggiano
  • 1 large size egg
  • ½ teaspoon Nutmeg powder
  • ½ teaspoon black pepper
  • Canned crusted corn kernel
  • Salt (as required)

STEP1: Cook chicken (use any kind of meat) on high flame and let meat releases juice.

STEP2: Turn off the gas and keep it aside to cool down. Now take a jar and put the entire meat chunks in blender jar to blend.

STEP3: After blending it’s time to add some ingredients in it such as grated parmesan cheese, nutmeg, black pepper now mix well to taste.

STEP 4: Time to check the mixture and add little salt in it because parmesan, egg and butter have enough salt.

STEP5: After making tortellini ring shape pasta put some filling in center and apply some water on the edge to seal. Bring the edge down with pinch together to make tortellini then keep aside by dusting the flour.

STEP6: Let them dry around an hour. Use light refined flour on both sides of tortellini so that it doesn’t let too much sticky.

Steps to make Tortellini Pasta Recipes

STEP1: First turn the gas on, put small non stick pan on flame and heat the butter. Add onion dices, minced clove, garlic now add red chili flakes, dried basil, dried oregano, tomato paste and cook for 2 minutes.

STEP2:  Add both chicken and tortellini pasta to boil at the same time. Now add fresh baby spinach, salt to taste then cook it for 5 minutes till tortellini float on surface.

STEP3: Maintain consistency and it should be mushy at the end. Do not overcook to taste delicious and healthy.

STEP4: At last garnish with spinach, basil and parmesan cheese.

Cheese Tortellini Pasta casserole recipe

  • 2 tbsp Butter
  • 1 tbsp garlic minced
  • 1teaspoon basil
  • 1tea spoon red chili flakes
  • 125 gram Fresh cheery tomato
  • 5 to 7 Small spinach leaves
  • 5 to 7 Small basil leaves
  • Add mushroom

STEP1: Turn on the flame to medium, keep the pan on it. Add water, salt, olive oil and tortellini pasta to blanch them.

STEP2: Cook for one minute then transfer the blanch tortellini in a bowl to become cool.

STEP3: Heat the pan again on next burner, splash the pasta water on pan to check heating pan if heated properly then add butter, then minced garlic sauté till light brown.

STEP4: Splash water again before adding spices, add dry basil, red chili flakes.

STEP5: Again splash pasta water to add fresh tomato, mushroom and pasta. Now cook one minute more and splash one teaspoon pasta water for a while.

STEP6: Time to take oven tray and fill it with tortellini pasta which we have made in pan, cover with grated fresh mozzarella cheese and bake for 15 minutes at 180c to 120c.

STEP7: At last garnish it with basil and serve hot.
